Low Calories Zucchini Pesto Pasta with Mushrooms and Sausage.

Here is my first recipe post. I hope you guys like.

I did not gave any measurement because the idea started with my fiancee asking me to do this dish for dinner, however I made regular pasta for him, and just one serving for me with the zucchini pasta.
I took apart a little of the mushroom, sausage and pesto for me, and mix the rest with the regular whole wheat pasta I made for him. So aside from the quantity for the zucchini and the sausage, the other quantities, in parentheses, are just an estimate of what I think would be the appropriate quantity. However, use as little or as much as you like.

Zucchini pasta is a big star in the Raw Food Diet. I actually first read about it in a raw food diet blog.
I tried, loved, and have be eating ever since.  I used the zucchini noodles for tonight's dinner, and here is what I came up with:



- 1 Zucchini Pasta (Zucchini Julienne)
- (4 or 5 ) Chopped White Mushroom
- (2 or 3 tablespoons ) Chopped Onion
- 1/2 link of Italian sausage.
- Pesto Sauce
- Parmesan to top


Julienne your zucchini and sautee for couples minutes, until slightly tender. Fry the sausage until browned. Sautee the mushroom and onions , until golden (in the oil left from the sausage). Mix vegetable and sausage with the pesto sauce and top it with Parmesan cheese.

As for the pesto sauce I use a little package pesto I already had. I just added water and a couple tablespoons of olive oil. The calories on this pesto is definitely lower than regular pesto, but regular pesto is just soooooo much better.
I just used this pesto because I already had on the pantry, and I am trying to do a clean up.

As for calories, my plate was about 320 calories. If you use regular pesto then the calories would be more like 380 (if you use one tablespoon of pesto) or 440 (two tablespoons of pesto).

Not bad. Low in calories and VERY TASTY!!!
